Yield: 4 servings
Ingredients
- 1 bunch arugula, washed and trimmed
- 1/2 head radicchio, washed and sliced
- 1 Belgian endive, washed and sliced
- 1 small onion, sliced
- salt and freshly ground black pepper to taste

Preparing
Tear the arugula into bite-sized pieces and combine in a large salad bowl with the radicchio, endive, and onion. Combine Produce Pete’s Fresh Harvest Bistro Balsamic Vinaigrette Salad Dressing and salt and pepper. Toss well.
Preparing
Grill, broil or roast portabellas
Cut portabellas into slices
Toss with any of these salad combinations
* Cut-up romaine lettuce, Produce Pete’s Fresh Harvest Classico Caesar or Classic Creamy Caesar Salad Dressing, grated Parmesan cheese and croutons
* Mixed tender salad greens (mesclun), canned chickpeas and Produce Pete’s Fresh Harvest Golden Honey Mustard Salad Dressing
* Baby spinach leaves, Produce Pete’s Fresh Harvest Chunky Blue Cheese Salad Dressing
* Chopped iceberg lettuce, tomato, sweet onions, red bell pepper and olives with Produce Pete’s Fresh Harvest Homestyle Ranch Salad Dressing
* Blanched frozen green beans, toasted slivered almonds, sliced green onions and Produce Pete’s Fresh Harvest Raspberry Vinaigrette Salad Dressing
Salad with Greens, Reds, and Whites

Ingredients
- 1 bunch watercress, washed
- 2 heads Bibb or Boston lettuce, washed
- 1 pound mushrooms, sliced
- 1 bunch white radishes, sliced
- 1 cup raspberries
- 1/2 cup Produce Pete’s Fresh Harvest Raspberry Vinaigrette Salad Dressing
Preparing:
Place the greens, mushrooms, and radishes in a large bowl. Drizzle with Produce Pete’s Fresh Harvest Raspberry Vinaigrette Salad Dressing and toss. Sprinkle the berries over the salad.
Yield: 4 portions
Ingredients
- 4 cups mixed salad greens, torn in bite-sized pieces
- 1 large tomato, cut in thin wedges
- 1/2 cup sliced green onions (scallions)
- 1/3 cup sliced black olives
- 2 cooked boneless chicken breast halves (about 8 ounces) sliced
- 1 fully ripened Mexican avocado, halved, pitted, peeled and cut in thin wedges
- 1-1/4 cups Produce Pete’s Fresh Harvest Homestyle Ranch Salad Dressing
Preparing
Place greens in a serving platter; top with tomato wedges, green onions and olives. Arrange chicken and avocado over greens. Drizzle with Produce Pete’s Fresh Harvest Homestyle Ranch Salad Dressing. Serve with lime wedges, if desired.
Ingredients
- 2 large fresh eggplants
- Salt and pepper
- Produce Pete’s Fresh Harvest Homestyle Italian Salad Dressing
Preparing
Slice eggplant length-wise leaving skin on. In a bowl, add all ingredients and mix together. Place sliced eggplant into a large pan. Pour mixture onto eggplant and let marinate for approximately 1 hour; turning on occasion. Turn grill on to high. Put eggplant onto grill and cook for 2-3 minutes on each side. Serve warm.
Yield: 4 servings
Ingredients
- 2 large ripe beefsteak or other slicing tomatoes
- 1/4 cup chopped fresh basil
- 2 tablespoons finely chopped fresh Italian parsley
- 1 medium-sized red onion, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Preparing
Cut the tomatoes into chunks and place in a salad bowl. Add the remaining ingredients and toss well. Toss again right before serving.
Yield: 6 to 8 servings
Salad Ingredients
- 2 fresh heads of broccoli, cut into small pieces
- 1/2 cup golden raisins
- ½ cup of cashew nuts
- 1/2 small red onion, diced
- 1/2 pound bacon, cooked and crumbled

Preparing
In a large bowl, mix together all the salad ingredients add Produce Pete’s Fresh Harvest Homestyle Italian Salad Dressing, then stir until well mixed. Chill and serve.
Mama Louise's Potato and String Bean Salad
Yield: 6 to 8 servings
Ingredients
- 2 pounds potatoes, peeled and cubed
- 1 pound string beans
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Produce Pete’s Fresh Harvest Homestyle Italian Salad Dressing
Preparing
In a large sauce pan of water, boil the potatoes until fork - tender. Drain and set aside to cool. In a medium-sized saucepan, steam the string beans until barely tender. Drain and run quickly under cold water to set their color. Set aside to cool.
In a large bowl, combine potatoes, Produce Pete’s Fresh Harvest Homestyle Italian Salad Dressing, salt, and pepper. Mix well. Add more salad dressing if needed. Serve chilled or at room temperature.

Ingredients
- 1 head radicchio, shredded (3 ½ cups)
- 3 cups shredded green cabbage
- 1/4 cup pine nuts or slivered almonds, toasted
- Produce Pete’s Fresh Harvest Dijon Coleslaw Salad Dressing
Preparing
Toss the radicchio, green cabbage and pine nuts in a large bowl until combined. Pour the Produce Pete’s Fresh Harvest Dijon Coleslaw Salad Dressing over the salad and toss to coat.
